Andy Cookies

These cookies were invented in my sister Grace’s kitchen on Labor Day weekend 2006 when my nephew Andy asked to make cookies. Andy loves them and so do I.

<span-key>1 cup</span-key> <span-value>(2 sticks) unsalted butter, softened</span-value> <span-key>½ cup</span-key> <span-value>granulated sugar</span-value> <span-key>¾ cup</span-key> <span-value>packed light-brown sugar</span-value> <span-key>2</span-key> <span-value>large eggs, room temperature</span-value> <span-key>1 tsp</span-key> <span-value>vanilla extract</span-value> <span-key>1 ¾ cups</span-key> <span-value>all-purpose flour</span-value> <span-key>¼ cup</span-key> <span-value>Dutch-process cocoa powder (this ingredient is key!)</span-value> <span-key>1 tsp</span-key> <span-value>baking soda</span-value> <span-key>½ tsp</span-key> <span-value>baking powder</span-value> <span-key>½ tsp</span-key><span-value>salt</span-value> <span-key>¾ cup</span-key> <span-value>semisweet chocolate chunks</span-value> <span-key>¾ cup</span-key> <span-value>butterscotch chips</span-value> <span-key>¾ cup</span-key> <span-value>white chocolate chips</span-value> <span-key>1 ¾ cups</span-key> <span-value>flaked coconut</span-value> <span-key>¾ cup</span-key> <span-value>chopped pecans</span-value> <span-key>¾ cup</span-key> <span-value>chopped walnuts</span-value>

Preheat oven to 350°F/170°C.
In a mixing bowl, mix butter and sugars on medium speed until smooth.
Add eggs in one at a time.
Add vanilla.
Sift flour, cocoa powder, baking soda, baking powder, and salt into a medium bowl.
Add to the butter mixture on slow speed and combine well.
With a wooden spoon or spatula mix in chocolate chunks, butterscotch chips, white chocolate chips, flaked coconuts, and nuts. Batter will be thick.
Mix well.
Using a cookie scoop, drop heaping tbsp of dough 2 inches apart onto parchment-lined baking sheets.
Bake cookies for 12 minutes.
Allow to set on cookie sheet for 5 minutes.
Transfer to a cooling rack lined with parchment paper and cool completely.
Cookies can be stored in an airtight container up to one week.</span-p>
