Chicken Tinola
For many years, my mom worked the night shift at the hospital, so our family meals were limited. While the four of us couldn’t eat dinner together every night, she instilled the importance of a meal made with love and shared with the community.
Every third Sunday she would cook lunch for 20 people, haul the pots to a St. Vincent location where they had a very small dining room, then serve and eat with community members in need. The first dish that she asked me to help her make and serve was chicken tinola. She said it’s warm for their bellies, healthy for their hearts, and easy to share.
Many years later, she still cooks one Sunday a month and speaks so proudly of the children she’s watched grow over time: where they now go to college, their love of music, and how they always ask for seconds of her home-cooked meals made with love.
