Lasagna Rolls

Many of my fondest memories of my grandmother Santina involved la cucina! Whether it was just going to her house after school and watching her prepare a casual weekday dinner or entertaining 30-40 family members for Christmas or another occasion, she did it with such precision and love for those who would gather at her table.

It’s so hard to pick just one of her recipes, but one that stands out are her lasagna rolls, which were served as a side to a meat dish but often stole the show! We continue to make these for our family dinners, and hope you enjoy.

<span-key>12-16</span-key><span-value>lasagna noodles</span-value> <span-key>-</span-key><span-value>Pasta sauce (home-cooked or a couple jars of your favorite store-bought)</span-value> <span-key>2</span-key><span-value> 15-oz ricotta tubs</span-value> <span-key>1 cup</span-key><span-value>shredded mozzarella cheese, plus extra for top</span-value> <span-key>1 cup</span-key><span-value>Parmesan cheese </span-value> <span-key>2</span-key><span-value>eggs </span-value> <span-key>1 tbsp</span-key><span-value>chopped parsley, plus extra for garnish</span-value> <span-key>½ tsp</span-key><span-value>salt</span-value>

Preheat oven to 375℉/200℃.  
Cook lasagna noodles according to package directions. Drain well and lay flat on wax paper.
While noodles are cooling, blend all the other ingredients in a bowl.
Spread cheese mixture equally on lasagna strips and roll each one up, neither super tight nor loose.
Pour some sauce on bottom of large Pyrex dish or pan. Arrange rolls seam side down and cover each roll with some more sauce. Then sprinkle some extra mozzarella across the top.
Cover baking pan with foil and bake for 35-40 minutes, making sure they are heated through.
Garnish with parsley if desired and have extra heated pasta sauce for those who want it. If you aren’t going to use them all at once, rolls can be put on a baking sheet that you’ll put in the freezer until frozen, then put into a freezer bag and use whenever.</span-p>
