Mexican Wedding Cookies

I vividly remember spending many hours in the kitchen with my grandmother growing up, typically standing on a dining room chair so that I could clearly see what was going into measuring cups, bowls, and cookie sheets.

One of my Gram’s classic cookie recipes was this simple six-ingredient treat. Sharing this recipe is like sharing a piece of my heart and my childhood.

Preheat oven to 350°F/170°C.
Soften butter in microwave.
Mix butter, pecans, flour, salt, and vanilla in a bowl until a dough forms.
Roll dough into balls smaller than a walnut.
Lightly roll each ball in confectioners’ sugar until covered.
Bake on a greased cookie sheet for 10 minutes.</span-p>
