Mom’s Barbecue Beef

This is a favorite from my mom’s kitchen. She would make this as a comfort food either on days when we were in low spirits or days when we needed some extra love and support. When my sisters and I eat it, it makes us feel warm inside.

<span-key>2 ½-3 lb</span-key><span-value>boneless chuck roast</span-value><span-key>1</span-key><span-value>large onion, chopped</span-value><span-key>½ cup</span-key><span-value>celery, diced</span-value><span-key>2 tbsp</span-key><span-value>brown sugar</span-value><span-key>4 tbsp</span-key><span-value>lemon juice</span-value><span-key>1 cup</span-key><span-value>ketchup</span-value><span-key>3 tbsp</span-key><span-value>Worcestershire sauce</span-value><span-key>1 tsp</span-key><span-value>chili powder</span-value><span-key>1 ½ cups</span-key><span-value>water</span-value><span-key>-</span-key><span-value>Salt and pepper to taste</span-value>

Preheat oven to 350°F/170°C.
Place chuck roast in roaster or Dutch oven, and top with onion and celery.
Mix remaining ingredients and pour over meat.
Cook 4-5 hours or until meat is tender.
Shred beef while still warm.
Meat can be refrigerated or frozen. Make sure to store with remaining juice.
Serve on hamburger buns.</span-p>
