Simple Oatmeal Blueberry Pancakes

Growing up, it was always a great day that started with my mom’s oatmeal blueberry pancakes. These are a yummy way to have a bit of a treat while still getting health benefits from the oats and fresh berries. This year, it has been wonderful to introduce my one-year-old daughter to this family recipe. Needless to say, she’s a fan!

<span-key>1 cup</span-key> <span-value>oats (not quick)</span-value> <span-key>1 cup</span-key><span-value>milk</span-value> <span-key>2</span-key> <span-value>eggs</span-value> <span-key>½ tbsp</span-key> <span-value>brown sugar</span-value> <span-key>1 tbsp</span-key> <span-value>neutral cooking oil (canola, coconut, etc.)</span-value> <span-key>½ cup</span-key> <span-value>flour</span-value> <span-key>2 tsp</span-key> <span-value>baking powder</span-value> <span-key>½ tsp</span-key> <span-value>salt</span-value> <span-key>1 pint</span-key> <span-value>blueberries</span-value>

Soak oats in milk for 5 minutes.
Add eggs, brown sugar, and oil.
Mix together.
Add flour, baking powder, and salt.
(If too thick, add milk to thin.)
Fold in blueberries.
Scoop ¼ cup of batter onto hot griddle or pan and cook for 30 seconds per side.
Serve with your choice of toppings: butter, syrup, whipped cream, fresh berries.</span-p>
