Tuscan Tortellini Soup

My wife makes this soup every now and then, and our entire family loves it! (As many of you probably know, this isn’t always easy when you have two finicky kids.)  Plus, given she comes from a large Italian family, I think it makes us feel more connected to her family and heritage.

<span-key>2 tbsp</span-key><span-value>extra virgin olive oil</span-value><span-key>1</span-key><span-value>medium yellow onion, finely chopped</span-value><span-key>1 ½ lb</span-key><span-value>chicken-and-feta sausage, roughly chopped</span-value><span-key>1 tbsp</span-key><span-value>garlic, minced</span-value><span-key>3 cans</span-key><span-value>(28 oz) good-quality crushed tomatoes</span-value><span-key>1 can</span-key><span-value>(6 oz) tomato paste</span-value><span-key>6 cups</span-key><span-value>chicken stock</span-value><span-key>1 tsp</span-key><span-value>fresh basil, finely chopped</span-value><span-key>1 tsp</span-key><span-value>dried oregano</span-value><span-key>1 tsp</span-key><span-value>salt</span-value><span-key>¼ tsp</span-key><span-value>black pepper</span-value><span-key>1 pkg</span-key><span-value>(9 oz) cheese tortellini</span-value><span-key>2 cups</span-key><span-value>kale, roughly chopped </span-value><span-key>½ cup</span-key><span-value>heavy cream</span-value><span-key>⅓ cup</span-key><span-value>Parmesan cheese, grated</span-value>

In a large sauté pan, add the olive oil and place over medium heat.
Add the onion and sauté for about 3 minutes till fragrant.
Add the sausage and continue cooking for about 2 minutes.
Add the garlic and cook for an additional 30 seconds. Remove from the heat.
In a 6-quart slow cooker add the sausage-onion mixture, tomatoes, tomato paste, stock, basil, oregano, salt, and pepper.
Cover with a lid and cook on high for about 3 ½-4 hours.
Add the tortellini and cook for an additional 20 minutes.
Once the tortellini is cooked, add the chopped kale, heavy cream, and Parmesan, and cook for an additional 10 minutes.
Adjust the seasoning as needed and serve hot.</span-p>
