Cook Islands Banana Bread

This recipe for banana bread (varaoa meika) comes from my parents-in-law, who come from the Cook Islands. They immigrated to New Zealand in the 1960s, and traditional Cook Islands food continues to be a big part of how the family comes together, connects, and celebrates.

<span-key>⅓ cup</span-key> <span-value>butter</span-value> <span-key>⅔ cup</span-key> <span-value>sugar</span-value> <span-key>2</span-key> <span-value>eggs</span-value> <span-key>1 ¾ cups</span-key> <span-value>flour</span-value> <span-key>2 tsp</span-key> <span-value>baking powder</span-value> <span-key>¼ tsp</span-key> <span-value>baking soda</span-value> <span-key>-</span-key><span-value>Pinch of salt</span-value> <span-key>4</span-key><span-value>ripe bananas, well mashed</span-value> <span-key>1 tsp</span-key><span-value> vanilla</span-value>

Preheat oven to 350°F/170°C.
Cream the butter and sugar.
Add the eggs one at a time.
Combine dry ingredients, and add them alternatively with the mashed bananas.
Stir in the vanilla.
Bake for 1 hour.
Allow the bread to cool, and store in an airtight tin.</span-p>
